I ended up building a custom one, but if I had to do it again, I would start with FUS and customize from there. I'd recommend FUS. The basic profile with VR vision is probably the lightest mod list out there (I've played through UVRE and AD before FUS). The basic FUS profile is close to a "vanilla game with all the VR updates and bug fixes needed for Skyrimvr to play probably.
